Just a small correction, the E8500 is not a quad core but a dual core processor. As such the Q6600 will probably be faster then it in rendering. But the E8500 will be faster in other parts of poser as those depend more on the 'GHz' value.
Personally i would get the Q6600 and overclock it to 3.16 GHz to get the best of both worlds, but that's only if you don't mind overclocking of course 
I'm runnng P5, P6, P7 and P7Pro on a Q6600 system. Compared to my previous Athlon4400x2, everything is signficantly faster. Of course rendering benefits from the 4 cores, but all other aspects also are faster than on the Athlon.
An advantage of the E8500 is that it's built using 45 nm tech, whereas the Q6600 uses 65 nm tech. Which means that the E8500 uses less power and runs cooler. THen again, I didn't overclock my system, and CPU temperature and system temperature always remain below 50 C, even when CPU usage is 100% for extended periods (hours).
