The figure on the left side of the entrance to this Inca bar, part of a walled compound that includes living quarters, a bar, a room for the Guinea pigs (a domestic food source), a small room for the sale of homemade souvenirs, a small court yard with a few local gaming contraptions,and a small area for growing corn and potatoes, advertises Chicha de Jora, a homemade alcoholic drink.
Chicha de Jora is a local beer made by germinating maize, extracting the malt sugars, boiling the wort, and fermenting it in large vessels, usually earthen ware vats.
Chcicha de Jora is traditionally made with Jora corn from the Andes. It is a pale straw color, has a slightly milky appearance, and has a slightly sour aftertaste. It is drunk either young and sweet, or mature and strong. It usually has about a 2% alcohol content.
Chicha de Jora has been prepared and consumed in communities throughout the Andes for millennia. The Inca used Chicha for ritual purposes and consumed it in vast quantities during religious festivals. Mills in which it was probably made were found at Machu Picchu.
In recent years however, the traditionally prepared Chicha is becoming increasingly rare. Only in a small number of towns and villages in Bolivia, Peru, Equator, Colombo, Costa Rica, is it still prepared. (Sources: Tourguide, Wikpedia). This Inca bar is located in a small village along the road between Urubamba and Chinchero, Sacred Inca Valley, Peru.
The owner, a woman, is preparing a new batch everyday, and serves it in 1 Liter containers.

If I had traveled on my own I would have missed this. I am glad the tour company included this. There were no other tourists there while we stopped. It was sort of out of the way!
