Description
Meat curing and drying in an old fashion smokehouse. Found this at a the Chena Indian Village and dog sled training camp - July 1986 and recently scanned.

Marvelous shot. I love seeing this process...I used to see smokehouses in back yards with fresh hams hanging. It always made me think of how much work really goes into our dinner table...well beyond the cooking time. :-)

I loved smoked haddock & my friend works at the smokery here on the docks, sadly it stands alone as the docks are no longer busy :o(
