...ever wonder how cheddar cheese progresses from Medium to Sharp to Extra Sharp?
...this is the cheddar cheese packaging line at the Tillamook Cheese Factory in Tillamook, Oregon photographed from the visitors' gallery overlooking the entire process.
...here 40 pound blocks of aged cheddar enter the factory floor for cutting and packaging.
Tillamook Cheddars are naturally aged in 40-pound blocks for a minimum of:
Medium Cheddar - 60 days
Sharp Cheddar - 9 months
Extra Sharp Cheddar - 15 months
Vintage White Medium Cheddar - 100 days
Vintage White Extra Sharp Cheddar - 2 years (there is also a special wedge that is aged 3 years!)
My favorite? Sharp cheddar or as we say in New York...'shap cheddaa'. lol
OK, I'm only kidding, I have no accent.
Hmmmmmmmmm, good...and please pass the crackers will you?
Bill
P.S. Almost forgot to add...167,000 pounds of cheese is produced a day here:-0

Love the creamy texture of the Medium cheddar. That is a fascinating factory to wander through.
Oh, wow, this is pure bliss--I'll take about 10 pounds of that extra sharp, please!!
Yummy nice to see our classic cheese going down Big in the USA.. Mature I know but sharp is a new term to me with Cheddar..
Oh, my! Look at all that GOLD! And then there are the "guillotines", cutting it into exact sized blocks before packaging. 40 pounds is about what a person can handle without back problems or the block crumbling. I'd love to see the initial part of the production (milk, additives, preparation for aging, etc. Did they let you see that, too?). I'm eating dinner, but this is making me hungry! Would love to have a package of this "gold"! This photo was a surprise, Bill. I simply love it. How many folks actually know anything about food production, packaging and handling? Yet, we're so used to having food and eating at will. More photos from this unique place please (if you have them).
Nice image!!
Say Cheese... Well someone had to say it.. Nice and golden cheese my favourite food...
We don't call it sharp. Mature, Extra Mature, Vintage, Extra Vintage, and also numbers 1 to 8. 1-2 Ok to feed the birds, the dogs will tolerate 3, 5 (Yintage)ideal for me, or 6 if with a nice apple pie and custard, or Christmas Cake. 8 can escape from the shopping bag before you get home.
Spectacular photo here, marvelous colors and POV, superb work!
lol @andrea.... sooo true
Super capture Bill, did they all have to say 'cheese'!!! Cheddar where it all originated is in my home county of Somerset.
impressive capture.. i had enjoyed cheddar this evening
Thats fascinating. I often wonder whether the people who work in this environment end up absolutely loving cheese....or hating it!!!!
Thanks for the info....I never really knew the differences. Our choice is always Extra Sharp (just like your picture).
Great image I think people to soak up the color as well I am talking about those who have allergic reactions to the weather change Called Seasonal something......... The cheese and the color would indeed chase away all the cold Awesome capture........I bet people we wondering what you were doing while you took shots and they worked LOL Hugs Susan~
wonderful shot
No accent. Yes. This morning when you said, quite out of the blue, "I posted a picture of the cheddah line," my mind was totally blank. Seriously. I had NO freakin' idea what you were talking about! I think railroads were in there somewhere, but my brain just did a spin. Quite aside from all that ... this is a great shot! The Tillamook Cheese Factory is SUCH a fun place. Blessed are the Cheesemakers! :P
To be absolutely frank with you, no, I have never thought of cheddar in my arena of cheese choices, which is really limited. And, I was going to say a nice cheesy shot, but that would impugn the excellent POV, DOF, clarity, detail and wonderful repetition of it all, Bill.
A lovely capture of all this cheese, they certainly make a lot each day. We have a little factory here that turns out speciality cheeses but I just like a nice edam or a mild.
GREAT SHOT
personally besides Mexican white chesse, mild cheddar is my favorite.very interesting process and capture
Good photo. I always love a good cheese and fruit platter.
Great POV- thanks for sharing! :-)
