Description
Cuy, also called Cobayo or conejilla de indias is a Guinea pig and is considered a Peruvian delicatesse. It is also considered a delicatesse in other Andean countries such as Bolivia and Columbia. It is roasted and served whole and is very tasty but rich and has many small bones.

I went to a Peruvian restaurant here in Phoenix, a little whole-in-the-wall place, and they wont cook cuy. I think they are worried about animal rights activists!
