How do you determine how to set the height? How much is scale (x,y,z) vs how much is leg length. Both will effect the height..!??

That’s a good question, and we cover it extensively in the Manual. The question is, what are you, as an artist, trying to achieve? XYZ scaling is appropriate for a child, someone with a small body. Leg length is appropriate for making adults taller were shorter. Of course, some short adults also have smaller bodies, so you use a little of both.
In the case of Marilyn Monroe, we used a -0.6 leg length, and 99% body size. Always make sure you scale up the head to compensate.
