When You're Ordered to Stay Inside
We were empty nesters and just moved across the USA from California to tiny rural home in Western New York. My wife came to me one day and said, "I've been impressed we should increase our food storage."
I looked at her like she had a hole in her head and said, "We have more than a year's worth of hard red wheat and definitely enough for the two of us if we should fall upon hard times."
She looked back at me and related how she was impressed that we should sell our California house BEFORE the market crashed. I couldn't argue with that. She nailed that one on the head. So, over the years when we'd go grocery shopping we'd pickup an extra jar or can of this or that.
Since then, many of the cans have gone bad and bloated, but much has retained its integrity. We're coming up on 2 weeks of lock down and I've had to get creative in my menu planning. (I do most of the cooking.)
So, what do you do with a can of coconut milk, peanuts and a few fresh vegetables?
You make a Thai inspired peanut coconut soup.
My wife, when I told her what I was going to fix, looked at me and said, "Sounds gross."
She took one spoon full and liked it. She had 2 bowls.
