Lighting model refers to the Shader Base type used by the renderer and will open or close different parameter values withing the surface settings required for that type. Generally select the Lighting model that best reflects what type of object you are attempting to create. E.g Skin Lighting Model will do a much better job of simulating skin when rendered, but not so good for a steel ball bearing which you should probably use a Metallic setting.

It's essentially a 3Delight thing - it actually switched the shader code used, as does the Toon render style - and it is available only with the Daz Default Shader.
