Firstly, Bryce isn't on this compy, so I can't give you any screenshots...
(1) The Escape key on PCs works wonders for this, there is also a button on the side that switches between Wireframe / Rendered / Mixed (Wireframe over render)
(2) I'm not entirely sure what your problem is here (a screenshot might help), and without Bryce in front of me I'm not much help on this one. Sorry.

Mahray's right - the ESC key gets you back to Edit mode. Plus, the tilde and number keys switch views (which also puts you in Edit.)
Tilde - Director view (my favorite for its manuverability)
1 - Camera view
2 - Top
3 - Side
4 - Back or Front
Also, I think the Bryce 6 manual is available at DAZ. I have it and that's where I go for all things Bryce so it must be there.

Susan Kitchen's "Real World Bryce 4" is still the best book out there so far, even though the software is now up to B6.
hit escape key to go fm rendered screen to mesh. (If the screen is in the process of a render u must hit the esc twice. The first click will halt the rendering. Hitting the esc twice will stop the render then take u back to edit screen meshes. This is a good thing to remember. You can stop a render, save it, then resume render later by clicking "resume render button". If you forget and accidentally hit the big "render button" ur render starts over from the beginning.
To resize a selected object proportionally: Position ur cursor over the center of the resize tool. This should highlight the center of the tool where the X,Y,and Z axis converge. Dragging from that position will change the object equally on all axis.
There are no ellipsoid primatives. Ur assumtion is correct.

I am following a tutorial in Bryce 5 Handbook (I know it has some mixed reviews but it is the only Bryce resource I have), and I'm using Bryce 6.
Can someone tell me the correct way to do this?
How to resize things proportionally? For example, trying to create a sphere and make it ellipsical. When I drag the sides and go to FLY AROUND view, my object is now FLAT and not round! How to I resize it properly without making it go flat all the time?
The book tells me to make two ellipsoids for my arms but I can't find it on the CREATE menu. Am I correct the author ment to elongate spheres like I've been trying?
