"What 3D Program Should I buy?" Not one person here can really tell you what's best for you, as everyone has their own taste in workflow. Try the demo or learning edition of the program you're interested in, this is the only way to find out which programs you like.
for which app? the basics are simple enough, create a cutting object and cut your model with it as per the specific app. group the cut section ( for easy moving ) or, for impressive animation sequence, instead of moving the cut section, fade it to transparent. using the animation tools of your choice and setting keyframes which have the transparency settings ( or movement if going that route )
Some apps, it's as easy as doing a boolean. (ie: in Bryce you could make the main object a positive, then boolean away the rest with a negative cube, and group it.) Other apps, you have to draw or cut edges along the section where the cutaway is to occur. Also what you do may depend on the effect you're trying to achieve. (The actual cutting of the object is more likely to work if you want something that "pulls" apart.)
