No, I don't use the default lights. To start with, I use an HDRI called white room. It's a room with white walls, a window, a door, and a shelf. It adds a little to reflect without affecting color much. I also have a point light in there to add a little extra specular. For final renders, I light them depending on the scene. If it's a portrait, I'll use the same HDRI and some 3-point studio lighting. The image I posted above was an outdoor HDRI of a sunny day, and I used a point light with a blackbody of 6500 to mimic the sun itself to give better shadows.
