Any more progress? I know I'd save the deraileur and chain for last. (Lots of little bits, and you need the other geometry there in order to position them correctly.)
And are you doing traditional spoked wheels or composite? You'll probably want to google a bit on "bicycle wheel building" to do research if you're going with spoked wheels. (So you can figure out the count, cross pattern, and stagger.) Composite wheels are a lot easier to model in comparison.
