I model in Wings3d. It's open source and multi-platform, and I found the interface easy to understand. Since I'm not changing the topology anymore at this, stage, just sculpting, I use its awesome tweak tool most of the time. Blender is another free alternative, which is much more powerful, but also has a somewhat steeper learning curve.
I'm not sure I'm really thinking in 3d when I sculpt. It's just like 2d from many different angles. 
Most of the rigging was done by phantom3D. I think he used both Poser and D|S (more precisely the DAZ Setup Tools) with a preference for D|S as of late. I'm now using D|S for the JCMs, and will from now on try to avoid Poser for rigging as much as possible.
