Ah ha, I've finally worked it out.

There's a folder called:

C:Documents and SettingsMyUserApplication DataEoviaCarrara 5

This contains user settings and hence is not removed when the application is uninstalled. I renamed this folder and reran the Carrara and it worked fine.
